The Most Delicious Breakfast Recipe
As the days grow shorter and the air becomes crisper, it’s time to bid farewell to summer and welcome autumn and the baking season! I’m not a big fan of autumn or winter, but I enjoy baking simple homemade sweet treats because I’m not an experienced baker.
In today’s blog, I thought I would showcase a few of the most delicious breakfast recipes that are also really easy to make at home. From oat cookies to protein-packed pancakes or a breakfast that the whole family can enjoy, including the kids – don’t worry I’ve got you covered!
While looking for good and easy-to-follow recipes, I found a cookie recipe from ‘Let’s Eat Cookies’ by Maria Litcy. I love that you don’t need to buy a lot of ingredients; instead, you only need ingredients you probably already have in your cupboards; like peanut butter. Ingredients you will need for these delicious breakfast cookies:
- Bananas – to have the best-tasting cookie going, you’ll need very ripe bananas; as this will add both the moisture and sweetness to your cookies.
- Maple syrup – adding a little maple syrup, can give your cookies the perfect amount of sweetness, without using the commonly used granulated sugar.
- Peanut Butter – You can use it with peanut butter or almond butter.
- Oats – This is for the base of your cookie and you can either opt for oat flour or rolled oats. Whatever works best for you!
- Eggs – You will only need 1 egg and for a vegan option, you can use applesauce.
- Flaxseeds – Adding these can help to boost omega-3s and fibre.
- Cinnamon – For a cosy flavour, add a little sprinkle of cinnamon.
- The baking staples – You will need baking soda, salt and vanilla extract.
- Chocolate Chips – Simple, why the hell not!
How to make the breakfast cookies:
- Mix the wet ingredients: Start by mixing all the wet ingredients in a large bowl until smooth.
- Add all the dry ingredients: Stir in the oats, cinnamon, baking soda and salt until just combined.
- Then add the rest of the ingredients: Fold in the chocolate chips or oats/hemp heart/chia seeds/walnuts (If you are using them). Allow the cookie dough to it for a few minutes.
- Scoop & bake: Scoop about 3 tablespoons of dough per cookie. Use a large cookie scoop and place each ball 2 inches apart onto a baking sheet. Top each dough ball with a few extra chocolate chips and bake them.
- Top, cool & enjoy: The last thing you need to do is sprinkle the cookies with sea salt, then allow them to cool on the baking sheet before transferring onto a wire rack to cool completely.
Ingredients you’ll need for these easy protein pancakes:
- 75g oats
- 3 eggs (large or medium)
- 1 banana
- 2 tbsp milk
- 1 tbsp baking powder
- pinch of cinnamon
- 2 tbsp protein powder (optional)
- Coconut oil, for frying
- Peanut butter, maple syrup, fresh fruit or lemon & sugar
How to make the pancakes:
- Put the fruits, oats, egg, milk, baking powder, cinnamon and protein powder (Optional) all into a blender for around 1-2 minutes until smooth and the oats have broken down if not then continue to blend for a further minute.
- Drizzle oil into a frying pan. Once the pan becomes hot, pour or ladle in 2-3 rounds of batter and leave a little space in between each pancake. Allow to cook for 1-2 minutes or until bubbles start to appear on the surface and the underside is golden. Flip over the pancakes to cook the other side for a minute or until it’s cooked through.
- Transfer to a warm oven, repeat with the remaining batter and serve in stacks with the topping of your choice.
Ingredients you’ll need for these tasty cereal bars:
- 3 cups of cereal – Any cereal of your choice.
- 2/3 cup peanut butter or nut butter – Yet again, you can choose.
- 1/2 cup agave, honey, or brown rice syrup.
- 1/2 tsp salt (optional)
- 3tbsp protein powder (optional)
How to make the cereal bars:
- Firstly, line your 8-inch pan with baking paper or parchment paper. If you are using peanuts or nut butter gently until easy to stir, then stir all the ingredients into a large bowl.
- Mix the peanut butter with the cereal of your choice and pour it into a pan, then place a second sheet of parchment or baking paper over the top and press the cereal bar down firmly into the pan – this will keep your cereal bar from falling apart after cutting it later.
- Freeze your bar for around half an hour or until it becomes firm enough to slice.
- Cover the leftovers and store them either in the fridge, freezer or on the counter in a cool dry place.
Ingredients that you will need for this bite-sized blueberry goodness:
- 100g unsalted butter – soften and 1tbsp for greasing
- 140g golden caster sugar
- 2 large eggs
- 140g natural yoghurt
- 1 tsp vanilla extract
- 2 tbsp milk
- 250g plain flour
- 2 tsp baking powder
- 1 tsp bicarbonate soda
- 125g blueberries
How to make the blueberry muffins:
- Preheat the oven to 200C/180C fan and line a 12-hole muffin tin with paper cases.
- Put the butter and caster sugar into a mixing bowl, and beat together until the mixture becomes fluffy. Then add in the eggs and continue to beat, before mixing in the yogurt, vanilla extract and milk.
- Combine the flour, baking powder and bicarb in a bowl along with 1/4 tsp fine salt, then add in the wet ingredients and stir together.
- Fold in the blueberries and then divide the mixture equally between the muffin cases.
- Bake the muffins for 5 mins before then reducing the temperature to 180C/160C fan and bake for a further 15 -18 minutes or until they have all risen and golden.
- Cool the muffins in the tins for about 10 minutes, then remove from the tin and place on a wire rack to finish cooling.
