Garlic Mashed Potatoes
Who doesn’t love creamy mashed potatoes and you don’t have to use sour cream or butter! Instead you can get their luscious texture and rich flavour from olive oil, roasted garlic, and a good splash of starch potato cooking water.
Ingredients:
Marsh Piper Potatoes (peeled and cut)
Garlic Clove
Olive Oil
Salt and Pepper

How to Make Mashed Potatoes
- Roast the garlic in the oven at 350c. Cook for 60 minutes or until the cloves are deeply brown and tender.
- Then peel the potatoes. You don’t have to cut the potatos, but you can if you want to.
- Next, boil the potatoes in boil water. Add a teaspoon of salt and boil until the potates become tender. Remember, before you drain don’t forget to reserve 1 cup of the starchy cooking water.
- Now it’s time to mash! For the creamy texture, rice the potates first but you don’t have to, you can just use a regular potatoes masher to break up any chunks and make sure you have mashed thoroughly.
- Finally, remove the tender garlic cloves from their paper and mash then into a paste with a folk or a small masher. Fold the garlic, salt and pepper all together. Season to taste and add more cooking water as needed to reach your desired consistency.
- Top with your favourite fixings and enjoy!
Traditional Sweet Baked Potato
If you enjoy a baked potato but are wanting an alternative way of having it but as low-carb meals, whislt still be topped with butter, salt & pepper.

How to Bake Sweet Potatoes
- Start by, preheating your oven to 200°c.
- Line a baking tray with either parchment paper or foil.
- Poke holes into the sweet potatoes, using a fork. Then set them onto the baking tray.
- Roast the potatoes for about 40-45 mintues, or until the skin has puffed up, to where you are able to easily pierce them with a fork.
- Then lastly top your sweet potatoe with anything of you choice. I usually go for baked beans & cheese.
Roasted Brussels Sprouts
These crispy roasted brussels sprouts, is healthy side dish that is prefect for a thankgiving dinner. A delicious lemon parmesan dressing makes it bright, zingy & addictive.
Ingredients
1lb Brussel Sprouts
Extra-virgin Olive Oil, for drizzling
Sea salt & Black Pepper
Opinional- Lemon Parmesan Seasoning
1tbsp lemon jouice, Plus 2tsp zect
1tbsp grated or 1/4 cup parmesan cheese
1tbsp prasley leaves, for garnish
Pinch of red pepper flakes
How to Cook Brussels Sprouts
- Firstly, trim and chop the brussels sprouts – chop off any dry or woody stems at the bottom. Then slice the large sprouts in half, while leaving the smaller one as whole.
- Season the sprouts – Drizzle olive oil all over the brussels and toss. Also give generous pinches of salt and pepper.
- It’s time to bake! – Place the baking tray or dish into a preheat oven and bake for around 30 minutes, or until the veggies are tender and are slightly golden brown around the edges.
- If you prefer, you can roasted the brussels sprouts with lemon juice zect, Paresan an thyme. Lastly garnish with parsley and red pepper flakes. Enjoy!
Creamed Spinach
There are hundrads of reasons to love this easy creamed spinach recipe. For one it’s fresh and the other is because it’s delicious and it comes together in under 15 minutes too!
Ingredients
Extra-virgin olive oil
1 shallot, chopped
1lb spinach
1/4 tsp sea salt, more to taste
3/4 cup full-fat coconut milk or 1/2 cream
2 garlic cloves, minced
1/2 tso Dijon mustard
1tbso cornstrach, mixed with 2tbsp of warm water
2tsp lemon juice
Ground black pepper
Creamed Spinach
- Heat up 1/2 tsp of olive oil in a large skillet over a medium heat.
- Add the spinach and toss until it’s just wilted. You can add in more oil if needed and transfer into a strainer and squeeze out anyexcess water.
- Clean the pan and heat 2tsp of olive oil over a medium heat.
- Add the shallot and salt and cook for around 5 to 8 minutes or until they become soft.
- Stir in the garlic and sauteed spinach, then add in the coconut milk, mustard and cornstrach mixture, and stir together until everythings combined.
- Lastly, stire in the lemon juice, season well with salt and pepper and serve.
