Build Your Own Vegan Burrito Bowl
The nice thing about these build-your-own bowls is that anything goes. So let’s kick out the rulebook! Start with a base of rice, quinoa or buckwheat, then layer with your favourite veggies, seeds, beans, chopped salad, tofu, basically whatever the hell takes your fancy.
Alternatively, if you’re craving a more heartier meal, simply swap out the salad ingredients and replace them for ingredients like lentils, broccoli florets and baked sweet potato or even butternut squash and enjoy!
